A burst of summer in winter


Today was cold! Cold for Brisbane anyway. Apparently it was 3 below average this morning. It is definitely Ekka time (always cold and everyone's sick). This morning at the train station I shivered while standing in what must be the coldest platform in Brisbane. I am not really a Summer girl, but I was keen on anything to warm my bones, even a touch of Summer. Luckily last night I did some baking with some classic summery flavours. If I can't be warm, at least I can eat something that reminds me of warmth. A hot cup of tea and one of these for morning tea has made my morning. ENJOY!


Passionfruit and Lemon Whoopie Pie

Whoopie Pie
125g butter, softened
215g caster sugar
2 tsp lemon rind
1 egg
300g plain flour
1 tsp bicarbonate of soda
125ml buttermilk

Preheat oven to 180°C. Line 4 oven trays with baking paper and set aside until batter is ready.

Using an electric mixer, beat the butter, sugar and lemon rind in a medium bowl until pale and creamy. Add the egg and beat until well combined. Add the flour, bicarbonate of soda and buttermilk in alternate batches then stir until just combined.

Spoon level tablespoons of mixture onto the lined tray, allowing room for spreading. Bake for about 8-10 minutes or until puffed and golden. Set aside for 5 minutes to cool slightly before transferring to a wire rack to cool completely. Repeat with remaining mixture.


Passionfruit butter
2 passionfruit
50g butter
2 eggs
100g caster sugar
1 tbs lemon juice
1 tsp cornflour

 
Place the passionfruit pulp, butter, egg, sugar, lemon juice and cornflour in a small saucepan over low heat. Cook, stirring, for 5 minutes or until mixture thickens. Transfer to a bowl and cover with plastic wrap. Place in the fridge for 30 minutes to cool completely.

Lemon icing
230g icing sugar mixture
2-3 tsp lemon juice

 
Place icing sugar in a medium bowl. Gradually add lemon juice, until a thick paste forms, adding more lemon juice or hot water to form a spreading consistency.

Assemble
Match like sized whoopies. Spread icing on the top (curved side) of one and passionfruit butter on the bottom (flat side) of the matching pair then sandwich the two flat sides together. Repeat with all whoopies. Place in air tight container to store, or eat and enjoy immediately.
