Do you have a special Sunday food tradition? My Mum use to tell me how her family use to have a big roast for Sunday lunch. The family would all get together and enjoy a big meal each Sunday. My Dad also told stories of how when he came over for dinner my grandfather would stand on the table trying to squat the tiny moths and that no one else at the table would flinch or think it was weird. I like to imagine he even did this at the big Sunday lunches.
We didn't have these kinds of traditions growing up, but we did have food legends. Like my Mum's chicken lasagne, which was so rich that we could only eat it once a year for fear of heart failure. And always having bread with dinner, which I would make a sandwich with using anything on my plate - you bet, I double carbed, bread and potato!!
I would like to think I could start some food traditions with my son. One that I think should be pretty doable is a big meal, possibly even a roast, on Sundays. Tonight I made a roast chicken with potatoes, mustard beans and an Italian bread/curton thing. It was delicious. Then to follow, these lemon and lime tarts. Enjoy!

Adding a tang to Easter
So, how was your Easter? Did you eat way too much chocolate? Did you drink too much beer/wine/whatever floats your boat? Last night did you vow only to eat carrot sticks for the next month? Well, if you said yes to all of the above, sounds like you had a pretty good Easter break!
Easter for me was a little different than past years. It was the first time since my son was born that I didn't share the joys of discovering what treats the Easter Bunny had left for him on Easter morning. I have loved seeing the excitement and shock across his face when he's come out of his bedroom to find evidence that the Easter Bunny has been to our house and even better, left him some delicious chocolate. The first Easter he was only about 9 months old, so instead of lots of chocolate, he got a few toys and chocolate custard. The next Easter he was old enough to eat chocolate and of course the family took full advantage of that - he had chocolate coming out of his ears! His third Easter he got pretty spoilt again, mainly because it was around the time his Dad and I were getting separated and I think we both just wanted him to have a great day and be spoilt by everyone and anyone. This Easter we were all pretty good. He spent Easter day with his Dad, which meant the Monday was our day. Even though it was only a few people around for lunch, I wanted to make it special by baking some fresh and Eastry desserts. It was lovely and even better, the Easter Bunny made a surprise stop at our house even though Reuben wasn't there. How exciting!

It's a tarty Friday treat
You know what's really funny? Giving a child a lemon to taste for the first time. I don't mean to be cruel, but it's one of those reactions that you can't help but laugh at. The innocence as they inspect the brightly coloured fruit, then naturally raise it to their mouth to taste. Then as the juice hits their tongue, the instant screwing up of their face followed by a look of complete shock - how can you not start to giggle, at least out of recognition of the situation.
I've never been a huge fan of the tartness of lemons, however as I get older, I seem to be more tolerant to their refreshing flavour. I also accept that most other people like lemons and citrus flavours, so thought I should probably add these to my baking list more often (and on a plus, if I don't like it, I will automatically eat less).
So, here are some lemony cheesecake tarts for my friends in the office today. They mainly act as a farewell for two wonderful people, neither from Australian so deserving of a fresh, tangy treat to remind them of their time here and working with our team.

Life needs a ganache topping!
Some say, "when life gets you down, make lemonade"... wait, that's not right. Try again... "when life gives you lemons, make lemonade". That's it. Well, when life gives me lemons next time, I'm going to add blueberries for a burst of sweetness and cover it all in a silky white chocolate ganache! Why drink lemonade when you can eat cake, that should be the new proverbial phrase!
I was served a few lemons in 2012, but also a lot of blueberries and... I need another food metaphor to complete this sentence, how about coconut for joy... coconuts. It was my hardest year to date both professionally and personally, but like everything, I made it through in one piece feeling stronger than ever.
The cake below isn't beautiful in it's appearance, it is what it is - a tasty treat with a few surprises peering through the glaze with honesty. I like to think of the white chocolate in my cake metaphor as the icing on the cake, literally, a way to coat last year and close it off. 2013 is a new beginning, a new flavour, a new adventure filled with new experiences. I wouldn't dare forget or wish away a moment of 2012, I am grateful for all I learnt and for the amazing people in my life, however I am also happy to look into the future and discover what awaits for me.

Who needs a reason to bake?
There are many reasons to bake - birthdays, celebrations, dinner parties... however my reason for baking last night was because I bought a new tin! I have been wanting to buy a bundt tin for ages and finally did over the weekend. I also had some passionfruits and a lemon which looked like they were in desperate need of being used, so that was another reason. Actually, I don't need a reason to bake, I just do it because I love it!
This is a delicious cake to share for morning tea or with coffee. It is moist yet crumbles between the fingers. The flavour is subtle with the butter coming through nicely, however if you'd like a stronger passionfruit flavour, add an extra passionfruit or two. The coconut adds a final tropical flavour and texture to the cake. So yummy! ENJOY.

A burst of summer in winter
Today was cold! Cold for Brisbane anyway. Apparently it was 3 below average this morning. It is definitely Ekka time (always cold and everyone's sick). This morning at the train station I shivered while standing in what must be the coldest platform in Brisbane. I am not really a Summer girl, but I was keen on anything to warm my bones, even a touch of Summer. Luckily last night I did some baking with some classic summery flavours. If I can't be warm, at least I can eat something that reminds me of warmth. A hot cup of tea and one of these for morning tea has made my morning. ENJOY!

Using lemons to say thanks
For the past 6 months I have been working on a massive project at work that has pretty much consumed me. It was challenging but so much fun and a fantastic experience. Leading this project meant that I received most of the praise when things went right (and alternatively, most of the criticism when they didn't).
I wanted to thank the other people in my team who put in just as many hours (possibly even more) and also offered their heart and soul to the project. I thought the best way for me to say thanks was with a cake! I don't make many fruity cakes, but with so many beautiful citrus fruits in season, I thought this would be perfect. Also, the person I'd like to dedicated this cake to (our wonderful graphic designer, who in my opinion saved our ass many times over with her skill and speed) is very healthy, so this cake is probably better suited to her than a crazy chocolate cake. ENJOY.

A zest for life
Did you know lemons are high in vitamin C and help prevent scurvy? Or that during the European Renaissance, fashionable ladies used lemon juice as a way to redden their lips? I'm not much of a fan of the taste of lemons, so I was unsure of what to write in this post. To keep things interesting, I found some lemon facts. So, to continue, did you know lemon juice is about 5% citric acid and lemons have a pH of 2 to 3. Also, lemonade may have originated from medieval Egypt. Interesting.
The reason I'm writing about lemons is I was recently asked by a friend to make some cupcakes. As always, I made my chocolate cupcakes but wanted to make a second flavour, something a bit lighter for those who don't share my sweet tooth. Lemon it was. To my surprise, the cupcakes were delicious. The use of the lemon zest in the icing instead of the juice gave it an amazing freshness, a zing, something I wasn't expecting. So, here it is, my lemon cupcakes for even the lemon haters amongst us.
